Bella considers Edward a mythical creature. She has a hard time believing that he's actually real.

Quote #20

[Edward to Bella:] "He actually discovered a coven of true vampires that lived hidden in the sewers of the city, only coming out by night to hunt. In those days, when monsters were not just myths and legends, that was the way many lived." (15.242)

Edward tells Bella about how Carlisle hunted for vampires during his human life. Since the 1600s when he was a human, people have come to think of vampires as mythological creatures, rather than actual beings.
