New minus old over old. That's the magic formula.

You started out with $3,000 and went to Vegas the first time. When you finally stumbled back to your room at 3 am, you had $3,762 in chips, and for some reason a stash of $1 bills. Oddly, you weren't wearing underwear and you can't remember when it...went away.

Anyway, your net change in cash was new: $3,762 minus old of $3,000, to be $762 in gains...over old, which was $3,000. So that was a gain of 762/3,000, or a bit more than 25%.
