The "Infidels"

This is a bit tricky because it's not as if Edmund is fighting the entire Saracen army by himself. Obviously. But the bulk of the conflict in his life definitely comes from the Crusaders' enemy in war. Without the "Infidels" (infidel, in case you didn't know, is a not-so-nice term for people who don't share someone's religious beliefs), Edmund has no reason to ever see battle and risk his life. So the Saracen army is the major antagonist in this book. They're what stands between the Holy Land and Edmund and his pals.
