Maria is there pretty much to please Harry's eyes, lips, and other erogenous zones. She is a prostitute, and Harry knows that Hermine is paying her for her services to him, but he still feels a strong bond to her.

She's the first woman who he likes even if she doesn't care about intellectual debates, and it's one of the only sexual relationships he's ever had where he doesn't take it (or himself) too seriously.
